BOOK AHEAD! Especially for the locations you are wanting to travel between. I had a nightmare about a month ago when i did the exact same trip. I'm not sure if it's still going on, but the paris rail company was on strike causing many delays and making it so that i couldn't book a ticket in Amsterdam. I ended up having to pay a lot even though i had a eurail pass. It is definately not cheaper to buy in europe and travelling the same day is a gamble. I would book ahead through the rail europe site.
